Does a jetski work like a car in the sense that you should let it warm up for a few minutes before taking it to wide open throttle (WOT)? Is that as important as a car?

20-30 seconds is good for a stock or near-stock ski, unless it's very cold out - like water temps below 50. Then warm up for at least a minute.
