I would like to know if anyone knows what the stock pitch of the impeller is and if what aftermarket impeller would give me the best performance especially getting out of the water.

Not sure of the original pitch, but a lower pitch number will result in quicker acceleration and lower top end, a higher pitch will result in slower acceleration and higher top end speed.

It's a trade off.

iF YOU WANT TO GET THE HOLE SHOT, GO TO A LOWER PITCH, BUT IT WILL HURT YOUR TOP END. bUT IT IS GREAT FOR ACCELERATION AND TO PULL SKIERS. i WOULD MUCH RATHER HAVE LOW END ACCELERAION THAT TOP SPEED. i BROKE BOTH LEGS WITH THE TOP SPEED.
