carb settings...

I have just installed an SBT engine on my 1999 polaris genesis, and have a q about carb settings. Will the settings that the previous, stock engine had be right? If not, then what should I set it at for break in? Just guide me through it, if you can. I just finally got it in, and don't want anything messing up on me. thanks!
