Would like to know what the maximum head and crank temp is allowed as I am breaking in new engine. I have a laser temp gauge to do this with. Thanks in advance.

It’s typical to read the spark plugs to identify how hot the engine is running, water jacket temps are way different than cylinder temps. If the cooling system is working properly than you could see 185 degrees or so at the head. I have no info for you on crank temps.SBT Tech Support is here to help with your problems.
