1994 Barracuda Carb Adjust

I'm pretty new to the jet ski thing....but i just finished rebuilding a 1994 barracuda. Cleaned the carbs and the engine runs great for awhile. Looses some power so I check the plugs, they are black and wet (possibly oil?) I pre-mix.
I was wondering if this was normal for a jet that has been setting up for years??
Also wondering on how to adjust the carb. I see the high and low screws, but which is which and how far in or out to I turn them?

640 engine = 7/8 low and high none

770 engine = 1-1/8 low and high is 5/8

900 engine = 1 low and high 1

1000 engine = 3/4 low and high none
