Yamaha 800*cc carburetor specs are as follows:

45‐55 psi pop off pressure. Try and get the carbs matched to the same psi, not just within spec. higher pop off = leaner mixture. lower pop off = richer mixture. If you have over sized pistons aim closer to 45 psi.

Low speed screws: 1‐7/8 turns out from seated +/‐ ¼ turn
high speed screws: 1/2 turn out from seated +/‐ ¼ turn

Also, here is a link to the carb specs for all other yamaha PWCs.

You probably have 1.2mm needles and seats but you would have to remove/read yours to confirm, but most Yamaha skis use that size. There is no true spec for springs, only recommendations. I say this because you can buy 2 of the same spring and get different pop off pressures from each. Use any spring in the rebuild kit that gets you to the proper pop off pressure. You may need to cut the springs for a fine tune. If you find yourself cutting springs, CUT ONLY A QUARTER COIL AT A TIME. Small adjustments can make a big difference. When setting pop off, check your pressures 8-10 times between adjustments averaging your results until you are in spec.
